About Part I: Distilling Operations Course

Prepare to absorb two lifetimes of knowledge in a fraction of the time. Master your craft with this one-of-a-kind, three-day advanced course designed for distillers ready to take a deeper dive into distillery engineering and operations.

Tap into over 70 years of combined operations experience as the best mentors in the business lead you through the nuances of the entire production process, from boiler to bottling.

Attendees will get to test their knowledge at our on-campus distillery, covering everything from equipment selection, maintenance, and troubleshooting, to best practices in distillate production and product development. We’ll also walk you through energy, resource, and production calculations, proofing and gauging methods, and a live breakdown of distillery site plans. You can also count on exploring evaluation techniques and post-distillation processing, blending, barreling, and bottling procedures.

About Part II: Fermentation

Fermentation is the conversion of sugars into alcohol. In the spirits business, alcohol is synonymous with money, which means the success of your finished product will rely on the efficiency of your fermentation process. This course shows students how to perfect that process, covering a variety of key fermentation considerations and best practices.

In this course, we’ll explore everything from the microbiology and cultivation of yeast, to the stages of its life cycle, paying special attention to how different variables affect the quality and consistency of fermentation in spirits production. Students will leave this course with an extensive understanding of the fermentation process, including how to obtain the optimal yield from every set and how to appropriately address any fermentation challenges that arise.

This class is for anyone who has or is planning to open and/or operate a distillery; or distillers ready to take a deeper dive into distillery engineering and operations, and refine their knowledge of fermentation processes.
