About Part I: Distilling Operations 201

Prepare to absorb two lifetimes of knowledge in a fraction of the time. Master your craft with this one-of-a-kind, three-day advanced course designed for distillers ready to take a deeper dive into distillery engineering and operations.

Tap into over 70 years of combined operations experience as the best mentors in the business lead you through the nuances of the entire production process, from boiler to bottling.

Attendees will get to test their knowledge at our on-campus distillery, covering everything from equipment selection, maintenance, and troubleshooting, to best practices in distillate production and product development. We’ll also walk you through energy, resource, and production calculations, proofing and gauging methods, and a live breakdown of distillery site plans. You can also count on exploring evaluation techniques and post-distillation processing, blending, barreling, and bottling procedures.

About Part II: Age-ucation

For distillers, aging alcohol to get the flavor and consistency you desire can take decades of trial and error, which can be both frustrating and expensive. But we’re here to change all of that with our Age-ucation workshop, featuring 30 experimental barrels and 9 hands-on experiments that will let you taste the effects of variables like entry proof, toast and char profiles, wood species, bottle soaks, and more. In addition to spending time with experts on warehouse management and flavor mapping, students will also receive GC data for all factors covered in the course, providing a valuable resource to pair with your newfound knowledge of aging and maturation. By the time you complete this class you’ll have a much clearer understanding of how you’ll want to approach aging your spirits, which makes this an investment that will not only save you time, but potentially tens of thousands of dollars.
